Recipes: Vietnamese Green Papaya Soup (Canh Du Du Nau Voi Xuong Co Heo)
The Vietnamese green papaya soup (Canh Du Du with Pork Neck Bone) is one of the best dishes, which it combines the green papaya, cilantros, and pork neck bones together. Of course, you can mix with other veggies or bones like beef bones/oxtail if you prefer. I like to cook this dish with pork because it is very tasty and delicious. I like to make this dish as often as I possibly can for my family because my kids love it, and yet it is very healthy serving for both lunch and dinner.
In fact, this is one of the many soup dishes that I regularly making on my daily basis for our lunch and dinner table. Especially, the way this green papaya soup is cooking has always made me hungry and wanted to try it right away. Remember to always simmer the neck bone pork or beef oxtail etc. because it gives that sweeter flavor to the broth.
Ingredient:
2½ liter water
1 whole medium green papaya (bout 31/2 lb)
1½ lb pork neckbone
2 tbsp chicken flavor soup base mix
1 tsp salt
2 tsp sugar
Roughly chopped cilantros
Direction:
Pork neck bones cleaning part before put into simmer.
Bring a pot of water to a boil, drop in the neck bones, and let it boil for about 2 minutes. Drain and clean well under tap water.
Meanwhile, peel the green papaya, cut splitted into four. Using a spoon, scrape out the seeds and the stingy pulp from the center. Clean very well under tap water and sliced as shown in the picture above.
In another pot, fill in 2½ liter of water, bring to a boil and add in pork neck bones that were boiling and cleaned earlier. When it comes to a boil, skim out the scum very well to get that clear broth. Cover the lid, and let it simmer under low heat for 1½ - 2 hours. Remove the lid, skim out any scum again and add in the green papaya. Add 2 tbsp chicken flavor soup base mix, 1 tsp salt, 2 tsp sugar. Cook for about 15 minutes or until the papaya is tender, add a big handful of roughly chopped cilantros on top and ready to serve. There you have it, a delicious green papaya soup.
